Definitely try bocata de calamares (a calamari sandwich), rosquillas (doughnuts), cocido madrileño (a hearty stew), churros with chocolate. If you’re feeling adventurous, callos (tripe soup), oreja a la brava (pig ears), entresijos or gallinejas (lamb tripe).
