Huevos a la flamenca, or “flamenco-style eggs” are an\u00a0Andalusian classic.<\/h3>\r\n\r\n\r\n\r\n

This is the perfect dish for spring and summer, and a great way to enjoy the seasonal vegetables from Seville’s food markets<\/a>. Traditionally, huevos a la flamenca are served hot in small individual ramekins.\u00a0<\/p>\r\n\r\n\r\n\r\n

Whether you throw it together\u00a0for lunch, or serve it to friends and family at dinner, this huevos a la flamenca recipe will be a hit every time.<\/p>\r\n

What are huevos a la flamenca?<\/h2>\r\n\r\n\r\n\r\n

Flamenco-style eggs are a staple of southern Spanish cuisine. It consists of a layer of eggs baked over vegetables, all topped with an array of Spain’s favorite ingredient: pork products. Like all the best local dishes in Seville<\/a>, there’s no original recipe, and every Spanish grandparent has their own spin on it!<\/p>\r\n\r\n\r\n\r\n

But because the recipe is so simple, the quality of the ingredients is super important. Go for free-range eggs if possible, and locally sourced produce to ensure freshness.<\/p>\r\n\r\n\r\n\r\n

Even the ramekins make a difference here\u2014baking the huevos a la flamenca in individual portions ensures that each one gets the most flavor possible.<\/p>\r\n\r\n\r\n\r\n

Huevos a la flamenca Recipe<\/h2>\r\n\r\n\r\n\r\n

Our huevos a la flamenca recipe is simple and delicious, making it easy to enjoy a taste of southern Spain no matter where you are in the world.<\/p>\r\n\r\n\r\n\r\n

Cook time:\u00a030 minutes
Total time:\u00a045 minutes
Serves:\u00a04<\/p>\r\n\r\n\r\n\r\n

Ingredients<\/h3>\r\n\r\n\r\n\r\n
    \r\n
  • 2 tablespoons Spanish extra-virgin olive oil<\/li>\r\n
  • 2 red peppers, finely chopped<\/li>\r\n
  • 1 onion, finely chopped<\/li>\r\n
  • 2 garlic cloves, finely chopped<\/li>\r\n
  • 15\u201320 grams (1\u20131.3 tablespoons) fresh tomatoes, grated<\/li>\r\n
  • 8 eggs<\/li>\r\n
  • 8 slices Serrano or Iberian ham<\/li>\r\n
  • 8 slices chorizo<\/li>\r\n
  • 140 grams (5 oz) peas (frozen or fresh)<\/li>\r\n
  • 1 tablespoon smoked paprika<\/li>\r\n
  • Salt and pepper, to taste<\/li>\r\n
  • Chopped parsley for garnish<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n

    Instructions<\/h3>\r\n\r\n\r\n\r\n
      \r\n
    1. Preheat the oven to 395\u00ba F (201\u00ba C).<\/li>\r\n
    2. Heat the olive oil in a pan over low heat. Add the onion and peppers and saut\u00e9 slowly until soft, approximately 10. minutes.<\/li>\r\n
    3. Add the garlic and saut\u00e9 until fragrant, about 1 minute, then add the tomatoes and paprika. Continue to saut\u00e9 over low heat for 15 minutes.<\/li>\r\n
    4. Remove the pan from the heat and divide the tomato, onion and pepper mixture into 4 ramekins.<\/li>\r\n
    5. Break 2 eggs on top of each ramekin, and top with 2 slices of ham, 2 slices of chorizo and a handful of peas.<\/li>\r\n
    6. Bake for 10 minutes or until the eggs are cooked to your liking.<\/li>\r\n
    7. Garnish with parsley, salt and pepper to taste.<\/li>\r\n
