What to Expect

Spain’s landlocked capital has long been known for its distinctive cuisine. And while in much of the world nose-to-tail cooking has become recognized in recent years, in Madrid, offal, or casquería en español, never went out of fashion. Join Arantxa, a Madrid local and Le Cordon Bleu-trained chef to learn about the importance of this way of cooking in Spanish cuisine and the basics of preparing offal at home.

You’ll learn to make Callos a la Madrileña, one of Madrid’s most famous nose-to-tail dishes–and it’s delicious, too! Even skeptics love this rich and hearty winter meal made of tripe, chorizo, blood sausage and more. You’ll receive the recipe beforehand so you can cook along with Arantxa. Or if you prefer, you’re welcome to sit back and take in her cooking tips so you can make your own Callos a la Madrileña later.
